Veggie Grits


This is a simple but tasty Vegan breakfast recipe. It involves using some vegetables, spices, and grits. Grits are usually eaten for breakfast in the Southern United States with eggs. For those who want to eat them vegan-style, this is a good, delicious alternative.

Ingredients

  • vegetable oil
  • ½ teaspoon of garlic powder
  • ¼ teaspoon of ginger powder
  • ¼ teaspoon of turmeric
  • ½ teaspoon of salt
  • ½ teaspoon of ground black pepper
  • 1 small carrot
  • 2 slices of white onion
  • 2 portabella mushrooms
  • ½ of a stalk of celery
  • 3 cups of water
  • ½ cup of quick grits

Directions

Pour some vegetable oil on to a skillet to lightly coat it.

Chop up the carrot, the two slices of onion, the celery stalk, and the mushrooms. Put them in the skillet with the vegetable oil.

Sprinkle one quarter teaspoon of salt on the vegetables. Then, sprinkle one quarter teaspoon of each of the other spices on them, namely, the garlic powder, ginger powder, turmeric, and ground black pepper.

Stir fry the vegetables on a stove on medium high heat. As they cook, stir them in the skillet with a fork. When the vegetables are tender, they are done. Set them aside.

Put 3 cups of water in a pan. Boil the water. After the water starts boiling, put the grits into the water. Sprinkle one quarter teaspoon of each of these items into the grits: salt, black pepper, and garlic powder. Stir into the grits. Cook them for about 2 to 5 minutes.

Pour the grits into a bowl or on a plate. Mix the stir fried vegetables in with the grits. This recipe makes about two servings. Enjoy!
